Eiheiji Temple in Fukui Prefecture is a living working Temple. It trains monks from all over Japan. The grounds there are gorgeous in all season and you can see the monks at work. Don't take pictures of them though its forbidden.

The temple doesn't offer tours in English but when you arrive they will have pamphlets for you to read as you walk around in English giving you the history and facts about the temple. They do offer an overnight experience meditation and buddhist life stay but that needs to be booked in advance.
