Arrive at a casual sushi restaurant in Shirahama, a coastal town in Wakayama Prefecture where the surrounding sea shapes much of the local food culture. As you step inside, meet your guide, who will introduce you to the setting and explain what the next 90 minutes will involve. The relaxed atmosphere of the restaurant sets the tone for a hands-on session rather than a formal dining event.

Watch your guide demonstrate how to shape and press nigiri sushi, walking through each step at close range. Take the rice in your own hands and begin forming it, applying the techniques shown to you. Your guide leads the session in English, explaining the steps and answering your questions. Work through the process at your own pace, repeating and refining each movement.

By the end of the session, shape your own pieces of nigiri sushi using the techniques demonstrated by your guide. Sit down and eat what you have made, tasting the direct result of the techniques you practiced. Leave with a clear sense of what goes into each piece of sushi — the rice handling, the pressure, the timing — carried through your own hands rather than just observed.
