We’ll start by learning how to roast spices such as star anise, cinnamon, and cardamom — essential for building pho’s distinctive flavor. You’ll also master the techniques of preparing the broth: simmering bones or chicken, skimming, and seasoning just right. While the broth cooks, you’ll prepare accompaniments like rice noodles, bean sprouts, and fresh herbs, and learn how to slice and prepare beef or chicken for the perfect finish.
