Step into the delicious world of Maison Fossier, the oldest biscuit factory in France, founded in 1756!

This one-hour guided tour immerses you in the heart of Reims' biscuit-making tradition and reveals the secrets of making the legendary Biscuit Rose de Reims.

For over 260 years, Maison Fossier has been keeping a unique know-how alive, one that's even been recognized by royal courts. In 1775, their biscuits were present at the Coronation of Louis XVI in Reims, and the biscuit factory became the king's supplier.

Today, Fossier is the only biscuit factory in Reims that still produces these iconic pink delights, with over 100 employees.

The Biscuit Rose: a legend born of a happy coincidence
Around 1690, Champagne bakers created a recipe to take advantage of the heat of the bread oven after baking: the “bis-cuit” (cooked twice) of Reims was born!

The characteristic pink color comes from an accident: to hide the brown traces left by the vanilla, the baker added a natural cochineal-based dye.

Since then, the recipe has remained unchanged, just like the double-baking method.

Label of excellence: Maison Fossier was awarded the “Living Heritage Company” label in 2006, recognizing its exceptional know-how.

Champagne tradition: The Pink Biscuit is traditionally enjoyed dipped in champagne or red wine.
