We will meet at a location in downtown and head to a market to do our shopping together.
Then we will head to our village, located 20 minutes from the city center.
We'll start by enjoying chocolate with bread. We will then prepare our breakfast: tortillas, memelitas, tetelas, and empanadas, as well as three traditional molcajete sauces. During the process, we will explain the flavors, techniques, and traditions associated with the ingredients and dishes.
Now it's time to enjoy breakfast! We will talk about Oaxacan culture and the history related to its cuisine.
We will now prepare our lunch: yellow mole, green mole, black mole, or coloradito mole.
The goal is to understand the flavors, names, differences, and how ingredients can be substituted when we don't have them on hand.
