Continue with a guided walk through the Olive Grove of Faith, home to more than 3,500 olive trees. Learn about the history and importance of olive cultivation in Herzegovina, the olive oil production process, and the different olive varieties grown at Paxa Dola. Discover how each variety contributes to the distinctive fruitiness, bitterness, and pungency of its oil. Along the way, admire beautiful views of the Velež and Prenj mountains, whose peaks are often covered with a “cap” of snow.

Next, visit the Olive Grove of Hope, planted in February 2025 during the special event “Unity in Diversity – Planting the Olive Grove of Hope.” Continue through St. Francis Park and the Biblical Garden, where plants mentioned in the Bible are grown.

Walk along the Path of the Olive Grove of Hope, where 14 stone slabs representing the Stations of the Cross are placed. Each slab features a short question inviting personal reflection. The shaded path leads through a small oak forest to the Hall of Pentecost, formed by 12 stone slabs symbolizing the 12 apostles, the 12 tribes of Israel, and the 12 fruits of the Holy Spirit.

Return to the Paxa House tasting room for a guided tasting of four PAXA extra virgin olive oils: the multi-varietal PAXA blend and three monovarietal oils—Pendolino, Oblica, and Istrian Bjelica. Discover the differences in fruitiness, bitterness, and pungency among the olive varieties.

The oils are paired with traditional local products, including cheese, prosciutto, wine, homemade fried dough known as uštipci, traditional monastic pastries based on recipes preserved by the Sisters for centuries, and a sweet dessert.

Complete your experience with a visit to the Paxa Dola art gallery and the historical museum, featuring artworks and preserved relics from the monastery that survived the war of the 1990s.
