You'll be served a 3-course meal with several choices from the menu:
Choice of Starters
• Lyon-style cured sausage, toasted Viennese bread, rocket emulsion and spring greens
• Green asparagus velouté, poached egg, golden croutons, green tarragon oil
• Spring salad, medley of seasonal vegetables (raw and cooked) with pecorino dressing
• Baby cuttlefish escabèche, crispy anise-flavoured canistrelli-style tuile
Choice of Main Courses
• Roasted chicken supreme, rich jus with green olives and sun-dried tomatoes, potato rösti and young vegetables
• Catch of the day, tomato marinade with extra virgin olive oil, tangy sweet potato purée and lightly sautéed vegetables
• Slow-cooked pork shoulder stuffed with fresh herbs, potato rösti and a rich sage jus
• Whole sea bream served “portefeuille” style, tangy sweet potato purée and lightly sautéed vegetables (supplement €8)
• Ricotta and spinach ravioli, green pea cream, parmesan shavings and a drizzle of tarragon oil
Choice of Desserts
• Apricot entremet, chocolate and lime crunchy layer, pistachio cream
• Pineapple trio: carpaccio, honey-roasted and white chocolate confit
• Rice pudding with salted butter caramel and crispy puffed rice
