In the splendid setting of the Caffetteria Reale in the Palazzo Reale, in Piazza Castello, a tasting of Ice One, the ice wine, is offered.
Ice Wine is a sweet wine made from grapes that are frozen on the vine, produced by Casa Ronsil in Chiomonte (TO).
The action of the frost dehydrates the fruit and allows the juices to concentrate, thus intensifying the aromas and fragrances. During the coldest winter nights, the harvesters cut the frozen bunches by hand. The production of ice wine is extremely limited. The quality varies greatly depending on how much the climate has facilitated the ripening and freezing of the bunches.
The grapes, harvested frozen, are then pressed at temperatures around -8 degrees Celsius. This way, the watery part of the fruit, which has formed into crystals, can be discarded, allowing no more than a few precious drops of juice to be obtained.
The result is therefore a very sugary must that will yield a very special and very precious wine. Ice One is the world's first red-berry Ice Wine made from native grape varieties of Chiomonte (TO) in the Val di Susa.
