This is a hands-on, winemaker-led harvest experience that takes guests through the first stages of winemaking. Begin in the vineyard with an introduction to the grape variety and how winemakers assess ripeness during vintage. Learn what influences harvest decisions, including flavour, sugar and acidity. Guests are provided with secateurs and baskets and shown how to safely hand-harvest grapes. Each guest will pick approximately 20 bunches of grapes using traditional harvesting techniques. Move to the processing area to transform grapes into juice. Guests can choose between foot stomping in an open fermenter or bucket processing, where grapes are crushed and juice is collected using gravity. The winemaker will demonstrate how Baumé (sugar levels) and pH (acidity) are measured and explain what these readings mean for fermentation and wine style. Taste freshly pressed grape juice and learn how early flavours influence the finished wine. Finish with a guided wine tasting featuring wines made from the same grape varieties, paired with a cheese plate, while enjoying views over the Barossa Ranges.
