What you can expect

Immerse yourself in the art of washoku, traditional Japanese cuisine, with a hands-on cooking class in Seki, Gifu. Led by Master Chef Shuji Ozeki, who brings over 45 years of culinary expertise and a holistic, mindful approach, the classes invite participants to explore the essence of Japanese cuisine.

Learn how to make dashi stock from kombu and bonito flakes. With the freshly made dashi stock, Chef Shuji will show you how to make three kinds of dishes, one soup dish and one rice dish. During the hands-on cooking class, learn new techniques and the principles of authentic Japanese cooking.

Enjoy your own creations in the dining room of Shuji’s Soba Restaurant. During the dinner, ask questions about the dishes, and learn about the food culture and Japanese life in general. Take home all the recipes to be able to cook the same dishes at home.
