Begin by being welcomed with fresh mint tea and local dates while your host introduces you to Mozabite culture, traditions, and the unique architecture of the M'Zab Valley.
Learn about the role of food in Mozabite family life, how the desert climate influences ingredients, and traditional cooking methods like clay pots, couscoussier, and charcoal stoves. The atmosphere is warm and intimate, giving you a true local experience rather than a tourist demonstration.
Next, explore and handle fresh local ingredients such as hand-rolled semolina, desert herbs and spices, seasonal vegetables, lamb or free-range chicken, chickpeas, and dried fruits. Your host explains how spices are blended and how Mozabite cuisine differs from other Algerian regions.
Then, prepare a full traditional meal together. Learn the proper semolina steaming technique, prepare spice blends, cook sauces from scratch, and understand the timing and layering of flavors. Everything is done step-by-step with guidance.
