Each truffle has its own specific period, and it is important to respect these seasons to preserve the natural balance and quality of the product. They are not found everywhere, they grow mainly along the Tiber River in northern Umbria The best time to harvest OLIVES is between the months of October and December, when the olives change color and become red/purple.
